Ingredients
- 2 garlic cloves
- 1 Pound Salmon
- EVOO
- Sprinkle of dill and herbs de Provence
- Salt and pepper, to taste.
- Yam noodles, also called Shirataki
- Optional; serve with apples and spinach
Recipe
- Place EVOO in a pan, heat on low.
- Meanwhile, mince garlic and press into salmon flesh.
- Add herbs, salt and pepper to fish. Remember you can always add more but it’s difficult to take away.
- Place salmon on pan, heat to medium.
- Cook uncovered until edges begin to turn white. Wait until liquid begins to ooze down, then flip.
- Lower heat. Cook for 2-3 minutes, then flip again.
- Salmon can be cooked kind of like a steak, medium to well done.
- After the second flip the salmon will be rare.
- 2-4 minutes more = medium
- 4-6 minutes= medium well
- 6+= well done

Yam Noodles
- Yam noodles are too easy to cook. Remove from bag and strain out liquid.
- Put in pot with water, bring to a boil. That’s it.
- Add EVOO, salt and pepper or perhaps, carrot -top pesto.
