Pan Fried Salmon & Yam Noodles with Carrot Pesto

Easy recipe that is lick your lips tasty.

Skill Level: Adventurous Prep cook to Line cook

Ingredients

  • 2 garlic cloves
  • 1 Pound Salmon
  • EVOO
  • Sprinkle of dill and herbs de Provence
  • Salt and pepper, to taste.
  • Yam noodles, also called Shirataki
  • Optional; serve with apples and spinach

Recipe

  1. Place EVOO in a pan, heat on low.
  2. Meanwhile, mince garlic and press into salmon flesh.
  3. Add herbs, salt and pepper to fish. Remember you can always add more but it’s difficult to take away.
  4. Place salmon on pan, heat to medium.
    1. Cook uncovered until edges begin to turn white. Wait until liquid begins to ooze down, then flip.
    2. Lower heat. Cook for 2-3 minutes, then flip again.
    3. Salmon can be cooked kind of like a steak, medium to well done.
    4. After the second flip the salmon will be rare.
      1. 2-4 minutes more = medium
      2. 4-6 minutes= medium well
      3. 6+= well done

  • Strainer

Yam Noodles

  1. Yam noodles are too easy to cook. Remove from bag and strain out liquid.
  2. Put in pot with water, bring to a boil. That’s it.
  3. Add EVOO, salt and pepper or perhaps, carrot -top pesto.
